Heat up the oven to 250 °C. Bake the U.S. wedges in the middle rack of the oven until the outside part is crispy. Take them out of the oven and let them cool.
Squeeze out the lemon juice to reduce the sourness. Wash the thinly sliced onions and squeeze all the water out.
In a bowl, add the lemon wedges, shrimp sauce, baked shrimp paste, salt, and oil, and mix them well with your hands.
Then add the crispy baked U.S. wedges, chopped mint leaves, and onions. Gently mix with your hands until all the ingredients and flavors have combined.
Adjust the taste to your liking then serve immediately. You can eat the dish on its own or pair it with white rice.
*Note: You can substitute mint with any herbs you like.
