  • 3 thinly sliced Russet Potatoes
  • 4 thinly sliced Tomatoes
  • 3 thinly sliced Zucchini
  • 2 thinly sliced Eggplants
  • ½ cup Olive Oil
  • 1 tsp. Pepper
  • 1 tsp. Oregano
  • 2 finely chopped Garlic Cloves
  • ½ cup grated Parmesan Cheese
  • ½ cup Basil Leaves
  • 1 tsp. Salt

Preparation
Prep Time: 10min | Cook Time: 35min

  • Mix pepper, oregano, salt, garlic, and olive oil in a bowl, then set aside.
  • In an ovenproof dish, arrange potato slices, zucchini, tomatoes, and eggplants in a spiral; cover with the prepared oil mix and bake at 180°C for 35 minutes. Sprinkle with parmesan and basil, then serve.
