20g Unsalted Butter

Place U.S. Straight Cut Potatoes into the air fryer and set at 180C degrees for 15 minutes. Air fry until U.S. Straight Cut Potatoes are golden and crispy.
Wash the salted egg yolks, and steam them for 8 minutes, then mash them.
Melt unsalted butter in another pan, add in chopped garlic and shallots and stir-fry until fragrant, then add coriander and the mashed salted eggs and continue stir-frying until thoroughly combined. Then add in ground pepper, salt, and chicken powder or seasoning powder or MSG (optional).
Finally, add the fried U.S. Potatoes to the seasoning, and toss gently till the U.S. Straight Cut Potatoes are covered with the salted egg yolk mixture.
Plating: Place the potatoes on a plate with fried coriander stem and chopped red chili (optional) *Note:Salted egg yolk should be washed with white wine to remove the fishy smell
