U.S. Frozen Potatoes Sauteed with Salted Egg Yolk and Coriander

A: Main ingredients

  • 300g U.S. Straight Cut Potatoes
  • 2pcs Salted Egg Yolks

B: Mixed seasoning

  • 1 tbsp Chopped Garlic
  • 1 tbsp Chopped Shallot
  • 15g Chopped Coriander
  • 1/2 tsp Ground Pepper
  • 1/2 tsp Salt
  • 1 tsp Chicken Powder or Seasoning Powder or MSG (Optional)
  • 20g Unsalted Butter

Prep Time: 10min | Cook Time: 20min

  • Place U.S. Straight Cut Potatoes into the air fryer and set at 180C degrees for 15 minutes. Air fry until U.S. Straight Cut Potatoes are golden and crispy. 
  • Wash the salted egg yolks, and steam them for 8 minutes, then mash them.
  • Melt unsalted butter in another pan, add in chopped garlic and shallots and stir-fry until fragrant, then add coriander and the mashed salted eggs and continue stir-frying until thoroughly combined. Then add in ground pepper, salt, and chicken powder or seasoning powder or MSG (optional).
  • Finally, add the fried U.S. Potatoes to the seasoning, and toss gently till the U.S. Straight Cut Potatoes are covered with the salted egg yolk mixture.

Plating: Place the potatoes on a plate with fried coriander stem and chopped red chili (optional)
*Note:Salted egg yolk should be washed with white wine to remove the fishy smell
