Sift the flour in a fine strainer. To make potato pancake batter, add butter, flour, U.S. instant mashed potato, eggs, and milk into a pan. Whisk until the batter is smooth and lump free.
Pour or scoop the desired amount of potato pancake batter onto a heated skillet.
Preparation for the Mushroom Duxelles
Sautée all the mushrooms and garlic in olive oil, then add cream cheese.
Stuff the Mushrooms Duxelles into the potato pancake rolls.
In a baking dish, spread the tomato sauce as a base and arrange the pancake rolls on the sauce.
Add white sauce, 70g of mozzarella, and parmesan cheese on top of the pancake.
Bake it in an oven at 180°C for 8 minutes.
