Place the U.S. potato croquettes on a baking sheet, and bake for 25 minutes.
Once the U.S. potato croquettes are out, spread a tablespoon of sour cream on each. Then add thin slices of salmon and avocado. Top with onions and cherry tomatoes.
*Note: Instead of using sour cream, try using refried beans, and grilled chicken instead of salmon for Mexican tostada.
