Potato Pancake

  • U.S. Instant Mashed Potatoes - 100g
  • Flour - 100g
  • Egg - 2
  • Milk - 500g

Mushroom Duxelles

  • Black Mushroom (Boiled and diced) - 200g
  • King Oyster Mushroom (Diced) - 100g
  • Garlic (Chopped) - 20g
  • Olive Oil - 20g
  • Salt - To taste
  • Pepper - To taste
  • Oregano - To taste
  • Cream Cheese - 150g
  • White Wine - 15g
  • Tomato Sauce - 300g
  • White Sauce - 300g

Preparation for the Potato Pancakes

  • Sift the flour in a fine strainer. To make potato pancake batter, add butter, flour, U.S. instant mashed potato, eggs, and milk into a pan. Whisk until the batter is smooth and lump free.
  • Pour or scoop the desired amount of potato pancake batter onto a heated skillet. 

Preparation for the Mushroom Duxelles

  • Sautée all the mushrooms and garlic in olive oil, then add cream cheese.
  • Stuff the Mushrooms Duxelles into the potato pancake rolls. 
  • In a baking dish, spread the tomato sauce as a base and arrange the pancake rolls on the sauce. 
  • Add white sauce, 70g of mozzarella, and parmesan cheese on top of the pancake. 
  • Bake it in an oven at 180°C for 8 minutes.
