U.S. Straight Cut Frozen Potatoes with Shrimp & Vegetable Vietnamese Rice Wrap

Ingredients

  • ½ Cup of U.S. Straight Cut Frozen Potatoes
  • 100 grams of fresh rice vermicelli
  • 4 (8.5 inch) rice wrappers
  • 8 large cooked shrimp
  • 1 ½ tablespoon of chopped mint
  • 1 leaf of Lettuce (roughly chopped)
  • ¼ cucumber (cut into thin strips)
  • ¼ red bell pepper (cut thinly)
  • ¼ yellow bell pepper (cut thinly)

Preparation
Prep Time: 10min | Cook Time: 20min

Instructions 

  1. Add 2 cups of water into a double steamer pan. Lay the U.S. Straight Cut Frozen Potatoes in the steamer basket pan and steam for 7 – 8 minutes. Take the U.S. Straight Cut Potatoes out from the steamer basket pan and let them cool down while preparing the rest of the ingredients.
  2. Soak the rice papers in cold water for about 1 minute then place it a dish one at a time. Load the vegetables and the steamed U.S. Potato layer by layer nicely and top with a few cooked shrimps. Roll into a cigar shaped parcel. Serve with the proper sauce.
