U.S. Hash Brown with Toasted Anchovy and Baboon Lemon Salad

  • 3 U.S. Hash Brown Patties
  • 1 cup of roasted anchovies
  • ½ baboon lemon (cut into bite sized pieces)
  • ½ teaspoon of brown sugar
  • 2 cloves of garlic (minced)
  • A pinch of pink salt
  • 2 teaspoons of fish sauce
  • 1 fresh chili (chopped)
  • 1 onion (thinly sliced) 
  • 1 tomato (thinly cut)
  • 1 teaspoon of shrimp paste
  • 2 teaspoons of olive oil

  1. Turn on the oven to 200°C (400°F) and place a baking rack on the sheet pan. Baking on the rack makes it easy to turn over and even the color with a crispy outside. Lay the U.S. Hash Brown Patties on the rack and bake for 10– 15 minutes. Don’t forget to turn them over after 5 minutes of baking. The baking time and temperature depend on the kind of oven you are using! Once both sides are golden and crispy, take them out of the oven and let them cool. Once they cool down, break the U.S. Hash Brown Patties into small bite size pieces.
  2. Add the U.S. Hash Brown pieces and the rest of the ingredients into a mixing bowl. Toss them with your hand lightly to combine all the ingredients.
  3. Taste and season with more salt, fish salt or oil as needed. Dish it on a serving plate and serve immediately.
