  • U.S. Dehydrated Potato Flakes - 60g
  • Milk - 150ml
  • Vegetable Stock - 100ml
  • Onions, chopped - 2.5g
  • Nutmeg - 3g
  • Butter - 120g
  • Cooking Cream - 25g
  • Beet Root - 20g
  • Pumpkin - 20g
  • Quail Eggs - 3
  • Garlic - 2g
  • Egg Yolk - 2pcs
  • Lime - 1pcs
  • Dory fish - 50g
  • Truffle Oil - 5ml

Preparation
Prep Time: 20min | Cook Time: 15min

  1. Heat up a small pot and add 20g of butter. Add the onions and garlic then sauté. Once cooked, add vegetable stock. Once the stock is boiling, add the U.S. dehydrated potato flakes and whip it. Add the milk and cream. Finally, add some nutmeg powder, salt, and pepper to season.
  2. For the beetroot mash, mash up the beetroot with 20g of mashed potatoes and whip it. Prepare the pumpkin mash using the same method.
  3. For the dory mash, sauté the dory fish with some onion, garlic, and mashed potatoes. Finally, add the truffle oil and mix it together.
  4. Add a poached quail egg on each mashed potato.
