U.S. Crinkle Cuts with Mackerel in Tomato Sauce Salad

Ingredients

  • 1 cup of U.S. Frozen Potatoes, Crinkle Cuts
  • 1 can (155 grams) of mackerel in tomato sauce
  • 2 bunches of cilantro (roughly chopped)
  • A pinch of black pepper
  • Lime juice
  • A pinch of pink salt
  • 1 fresh chili (seeded & chopped)
  • ½ cup of lettuce (chopped)
  • 2 teaspoons of fried onion
  • 1 tomato (seeded & cut into thin strips)
  • 3 teaspoons of olive oil

Instructions

  1. Place the U.S. Crinkle Cut Frozen Potatoes in a bowl and toss them with 2 teaspoons of olive oil. You can also spray them with oil as an alternative.
  2. Turn on the oven to 200°C (400°F), place a baking rack on the sheet pan. Evenly layer the U.S. Crinkle Cut Frozen Potatoes on the rack and bake for 15 – 18 minutes. The baking time and temperature depend on the kind of oven you are using! Once the U.S. Crinkle Cut Potatoes are golden and crispy, take them out of the oven and let them cool.
  3. Add the mackerel soaked in tomato sauce into a mixing bowl and break it into small pieces. Add the other ingredients and the baked U.S. Crinkle Cut Potatoes into the bowl, except for fried onions. Mix everything with your hand gently. Taste and season with more salt, pepper, lime, or oil as needed. Dish it on a serving plate and sprinkle with fried onions.
