This tofu skin rolls are packed with a delicious crunch from the mushroom, has a ginger flavor that binds together with U.S. frozen straight cut potatoes, and steamed to perfection with oyster sauce. A delicious and nutritious dish for everyone. If you are vegan, use vegetarian oyster sauce instead.

200 grams U.S. Straight Cut Frozen Potatoes
4 sheets of Fresh Tofu Skin
20 grams dried Shiitake Mushrooms, soaked in water
1 tsp finely sliced Ginger
Mix seasoning
1 tsp Soy Sauce
1 tsp White Wine
1 tsp Cornstarch
Oyster sauce, mix:
100 grams Water/Vegetable Stock/or Fresh Coconut Water
Soak shiitake mushrooms, wash and then cut into thin slices. Marinate shiitake mushrooms with mixed seasoning (B).
Spread/flatten the fresh tofu skin sheets, then place U.S. Straight Cut Frozen Potatoes, thinly sliced shiitake mushrooms, sliced ginger, and then roll. Put the rolls in a plate or tray with the oyster sauce mixture (C) and steam for about 5-8 minutes until the sauce thickens.
Garnish with coriander or thinly sliced red chili (optional).
This dish will go well with steamed rice or noodles, or can be served as a dim sum dish.
