This recipe of Frozen Potato Straight Cut mix with eggs, bacon, spinach, tomato, and basil, baked until golden and served with chili sauce is the perfect breakfast that’s not only easy to make but also super tasty.



  • ½ pound Frozen Potato straight cut
  • 2 Eggs
  • 2 ounces Smoked Bacon, cut into small pieces
  • 2 ounces Spinach, cut into small pieces
  • 2 ounces Onions, dice
  • 2 ounces Tomatoes, dice
  • ½ ounce Basil leaf
  • 1 teaspoon Minced Garlic
  • 2 ounces Milk
  • 2 teaspoons Oil
  • ½ teaspoon Salt and Pepper
  • Thai/Vietnamese Chili Sauce, as needed
  • 4 Cupcake cups

Prep Time: 15min | Cook Time: 15min

  • Preheat the oven to 350 F.
  • Stir fry onion, bacon and garlic with oil.
  • Add in spinach, tomato, milk, salt, and pepper. Stir and cook, then turn off the heat.
  • Add the eggs and basil leaf into the mixer.
  • Arrange the frozen potatoes in the cups then pour the mixture over.
  • Place the cups in the oven and bake for 13-15 minutes or until the potatoes are golden brown.  Remove the baked potatoes from the cup and allow them to cool for 3-5 minutes.
  • Serve right away and enjoy!
