U.S. Hash Brown and Scrambled Egg

Ingredients

  • 3 U.S. Hash Brown Patties
  • 1 large egg (whisk well)
  • 2 cloves of garlic (mince)
  • ½ teaspoon of pink salt
  • 1 tablespoon of sesame oil
  • A pinch of white pepper (crushed)
  • 2 stalks of spring onions (chopped)
  • 1 onion (diced)
  • 1 tomato (seeded & diced)

Instructions 

  1. Turn on the oven to 200°C (400°F), place a baking rack on the sheet pan. Baking on the rack makes it easy to turn over and even the color with a crispy outside.  Lay the U.S. Hash Brown Patties on the rack and bake for 10– 15 minutes. Don’t forget to turn them over after 5 minutes of baking. The baking time and temperature depend on the kind of oven you are using! Once both sides are golden and crispy, take them out of the oven and let them cool. Once they cool down, break the U.S. Hash Brown Patties into small bite size pieces.
  2. In a sauté pan, heat up the sesame oil over medium heat. Add the garlic and sauté, stirring frequently until the garlic is fragrant and well cooked. Add the onion and cook until transparent. Add the tomatoes and cook until they are wilted. Add the U.S. Hash Brown pieces and cook for 2-3 minutes. Lastly, add the egg and stir to coat it well and season with salt and pepper.
  3. Taste and season with more salt and pepper as needed. Remove it from heat, stir in the spring onions and serve immediately.
